Fruit Cake is a dense cake that is traditionally served at Christmas time in the Caribbean. Dried fruits are soaked in rum and wine for months and then added to a batter that is usually made of sugar, butter, eggs, flour, browning and spices. The result is a rich, delicious, divine, mouthwatering, absolutely scrumptious desert.
Depending on which Caribbean Island you are from, Fruit Cake is also known as Christmas Cake, Rum Cake, Black Cake or Plum Pudding. Culinary historians believe that “Caribbean rum cake” originated as a steamed pudding, brought to the Islands by English settlers in the mid-seventeenth century.
